Valentine's Day

I want to take a quick moment here to send a "Shout Out " to all industry workers for the hard work that goes into Valentine's Day every year.  The hours and hours of work leading up to the event and the sacrifices made by wives,   husbands, girlfriends, boyfriends and families so that we make an enjoyable night for others.  Thank you ALL!!! And a special thank you to our team at Four Daughters...all of our regulars and especially thank you to the others that came in and helped pull off this great night.

Alright now onto our night...

Lots of notes and preparation into the menu and food for the evening...We served a six course meal with many components to each dish...We were so organized that we even had some time to relax before our guests arrived.

The Menu

We started each table off with a tasting plate that had some fun munchies.  Each plate had: prosciutto, rustic salami, sun dried tomato and white bean spread, marinated olives, bleu cheese, marinated vegetables, lavosh crackers and crostini.


We then served a Blue Point Oyster that we roasted on a bed of rock salt.  The oyster was roasted with a nice piece of our house smoke pork belly and sherry cream.


Third Course was a salad the consisted of roasted beets, goat cheese, baby spinach, spiced walnuts, red onion and balsamic-orange vinaigrette.  We mixed the beets with the goat cheese for a beautiful dark pink color and molded them into a heart shape.


Next was the sorbet...this was a very tasty treat.  Four Daughters Moscato with combined with meyer lemons to make the sorbet.  We then added a honey and rosemary shortbread cookie.  Lots of cold fingers as we plated out in the cold.


Dinner Time!!!  We did our salt and pepper crusted beef tenderloin and a butter braised lobster tail for the entree.  It was served with confit Yukon gold potatoes, grilled asparagus and a Big Boy buerre rouge for the beef and a riesling buerre blanc for the lobster.


And Dessert...Dark chocolate cheesecake with ganache and candied hearts.  We also have salted graham cracker crust, Marquette syrup and fresh raspberries.


What a fun night!!!  Thanks again to all that bought their loved ones out to Four Daughters and to all that helped make it happen!!!!
